Chocolate Cupcakes

Ingredients    
  • Flour: 1 1/3 cups
  • Baking soda: 1/4 teaspoon
  • Baking powder: 2 teaspoons
  • Cocoa powder: 1/4 cup
  • Salt: 1/8 teaspoon
  • Butter, softened: 7-8 tablespoons
  • Sugar: 1 1/3 cups
  • Eggs: 2
  • Vanilla extract: 1/4 teaspoon
  • Milk: 1 cup

Method
  • Preheat oven to 350 degrees F (175 degrees C). Line a muffin pan with paper or foil liners. Sift together the flour, baking powder, baking soda, cocoa and salt. Set aside.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Add the flour mixture alternately with the milk; beat well. Fill the muffin cups 3/4 full.
  • Bake for 15 to 17 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean. Frost with your favorite frosting when cool.

Chocolate Chip Cookies

Ingredients
  • Egg: 1
  • Oil/Butter/Margarine: 125 gm
  • Baking Powder: 1 Teaspoon
  • Vanilla Essence: ½ Teaspoon
  • Chocolate Chips: 100 gm
  • Caster Sugar: 55 gm
  • Flour 175 gm or 150 gm + Cocoa powder 25 gm
  • Brown Sugar 85 gm or use Caster sugar with 1 teaspoon Honey

Method
  • Mix flour and baking powder.
  • Now with the help of beater beat egg and add oil.
  • In the same mixture add sugars, essence and flour and mix well with the beater.
  • Add chips in the end, mix with a spoon and refrigerate for 30 minutes.
  • Make cookies with the help of hand or a spoon in a greased dish.
  • Now bake in a preheated oven at 190oC for 10 to 12 minutes.
  • Remove the cookies after the cool down otherwise they might break up.

Queen Mother's Cake

Ingredients
  • 8oz (225g) dried dates, chopped   
  • 1 teaspoon salt
  • 1 teaspoon bicarbonate of soda    
  • 1/2 teaspoon vanilla extract
  • 8oz (225g) caster sugar    
  • 10oz (275g) plain flour
  • 1 teaspoon baking powder 
  • 1 large egg, beaten
  • 2oz (50g) walnuts, chopped 
  • 3oz (75g) butter
For the topping                 
  • 5 tablespoons brown sugar
  • 2 tablespoons butter
  • 2 tablespoons single cream  
 Method

  • Pour a breakfast cup of boiling water over the dates and add the bicarbonate of soda. Let it stand for the time it takes to:
  • Cream the butter with the sugar in a bowl, then beat in the egg and vanilla.
  • Mix together the flour, baking powder and salt and add to the creamed mixture.
  • Add the date mixture and stir well.
  • (If using a food processor, place all the ingredients except the date mixture, into the bowl and process until well blended.  Add the date mixture and process until all the dry ingredients have been included.)
  • Grease and line the bottom of the Swiss roll tin and pour in the mixture, making sure to spread it to the edges.
  • Heat oven to 180ยบ/350F/Gas mark 4.  Bake cake for 35 minutes or until tester comes out clean.
  • To make the topping:  Put the butter, brown sugar and cream into a small heavy saucepan and put on a low heat until the butter has melted.
  • Bring to the boil, then boil gently for 3 minutes stirring all the time.
  • Spread over warm baked cake.
  • When cool cut cake into slices and store in a airtight tin.

Knot Rolls

Ingredients
·   Flour: 3 Cups
·   Egg: 1
·   Baking powder: 2 Tsp
·   Salt: a pinch
·   Sugar: 3 Tsp icing
·   Butter/Ghee: 2 Tsp
·   Cinnamon for Flavor (Optional): ½ Tsp
·   Milk: As required for mixing
Method
·   Mix all dry ingredients. Add egg and milk. Mix and make a dough.
·   Refrigerate it for an hour.
·   Flat the dough and cut its strips.
·   Make knot of each strip.
·   Deep fry the strips until they turn golden and then put them directly into the plate of icing sugar so that a layer of sugar is formed over them.
·   Serve with Tea or coffee.

Chocolate Piesh

Ingredients
·   Milk: 1 litre (4 Glass)
·   Flour: 3 Tbsp
·   Egg: 1
·   Sugar: 1 Cup
·   Butter/Ghee: 25 gm
·   Cocoa powder: 2Tbsp
Method
·   Keep small quantity of cold milk aside and boil the rest.
·   Add sugar, egg, flour into cold milk and beat well.
·   Now add the beaten mixture into the boiling milk and cook until it starts to leave its edges.
·   Turn off the flame and mix butter into it.
·   Separate ¼ of the mixture and pour the rest into serving bowl.
·   Add cocoa powder into the separated part, mix well and layer this over the  top of other mixture. Two layers brown and white will be observed.
·   Refrigerate and serve chilled.

Plain Sponge Cake

Ingredients
·   Flour: 2 Cups
·   Baking powder: 2 Tsp leveled
·   Eggs: 4
·   Sugar: 1 Cup
·   Butter/Ghee: 1 Cup
·   Vanilla essence: 2-3 drops
·   Warm water: 3 Tablespoons
Method
·   Preheat the oven at 190oC.
·   Beat butter and sugar until it becomes fluffy.
·   Mix in slightly beaten eggs. Add essence and mix with a spoon.
·   Mix flour and baking powder and add them into the batter by mixing in one direction.
·   If the mixture is too hard then add warm water according to the need.
·   Put the batter in dish and bake until it gets ready for around 30 minutes.

Walnut Brownies Recipe 2

Ingredients
·   Flour: 1 Cup
·   Baking soda: ¾ Tsp
·   Cocoa powder: 3 Tbsp heaped
·   Eggs: 2
·   Sugar: 1 Cup icing
·   Butter/Ghee: 3/4 Cup
·   Vanilla essence: 4 drops
·   Walnuts: ½ Cup
Method                      
·   Preheat the oven at 180oC.
·   Sift flour, cocoa powder, baking soda and mix.
·   Beat eggs, sugar and vanilla essence. Add butter and blend the mixture.
·   Add flour and walnuts and mix in one direction with a spoon.
·   Pour the batter into the dish and bake for 35-40 min.

Brownies Recipe 1

Ingredients
·   Flour: 1 + ½ Cup
·   Baking powder: 1Tsp
·   Cocoa powder: 8Tbsp
·   Eggs: 4
·   Sugar: 2 Cups
·   Oil: 1 Cup
·   Vanilla essence: 3 drops

Method                      
·   Preheat the oven at 180oC.
·   Mix Flour, baking powder and cocoa powder.
·   In a mixing bowl, slightly beat 4 eggs then add sugar and beat until the mixture become smooth. Add oil and vanilla essence and beat again.
·   Put dry ingredients into the better and mix in one direction with the help of spoon.
·   Pour the batter into the dish and bake for 35-40 min.
·   Server with chocolate sauce topping.

Apple Pie

Ingredients
  • Flour: 2 Cups
  • Icing Sugar: ¼ cup
  • Butter/ Ghee: 185 gm
  • Egg Yolks: 2
  • Water: 2-3 Tablespoons
  • Milk: For glazing

For Apple Filling
  • Apples: 3-4 medium sized, peeled and chopped
  • Sugar: ¾ Cup
  • Water: 2 Tablespoons
  • Cinnamon powder: ½ Teaspoon
  • Butter: 1 Tablespoon

Method
  • Brush pie dish with oil. Mix flour, icing sugar and butter to make dough. Further add egg yolks and water and mix well. Add more water if necessary.
  • Turn onto a lightly floured surface and knead briefly to form smooth dough. Dive the pastry into two parts, one slightly larger than other.
  • Roll he larger portion and fit it into the pie dish so that it covers base and sides of the dish. Roll the other part and refrigerate.
  • Combine apples, sugar, water and cinnamon in a pan. Cover and cook over low heat, stirring occasionally until just softened. Add butter, mix gently and set asideto cool.
  • Preheat the oven to 210oC. Pile the apples evenly into the pasty-lined pie dish. Brush the pie rim with milk.
  • Place the pastry lid over the apples and press the edges to seal.
  • Trim the pastry and seal the edges with fork.
  • Use a pastry or biscuit cutter to cut shapes from the leftover pastry and place the shapes on the top of the pie.
  • Slash 2 or 3 small holes in the pastry to allow steam to escape. Brush the surface of pie with milk.
  • Bake for 10 minutes. Reduce temperature to180oC and bake for another 30 moinutes or until pastry is golden brown.
  • Serve when it cool down.

Pudding


Ingredients
  • Bread: 1-2 slice(s)
  • Milk: 2 ½ Cup
  • Pudding: 1 Packet
  • Cream: For dressing

Method
  • Cut bread into four pieces per slice after removing sides. Cover the base of a flat serving bowl with them.  Do not use more than two slices.
  • Add milk in a pan and bring it to boil. 
  • Put in pudding powder to boiling milk with constant stirring. Cook for 2 minutes.
  • Pour the pudding over the bread slices. And let it be cool.
  • Add a layer of cream over the settled pudding and serve.
  • You can add sprinkles, nuts, jelly squares or fruits for garnishing.
