Ingredients
· Flour: 2 Cups
· Eggs: 4
· Icing Sugar: 2 Cup
· Oil: 1 + ¼ Cup
· Baking Powder: 2 Tablespoons
· Baking Soda: 1 Table Spoon
· Salt: ¼ Teaspoon
· Carrot: 3 Cups Crushed
· Walnut (Optional): 1 Cup
· Eggs: 4

Method
· Preheat the oven at 170oC.
· Beat the eggs slightly.
· Mix oil and sugar.
· Add baking powder and baking soda to flour and mix well.
· Now in a bigger bowl add eggs and oil plus sugar mixture to above mentioned dry ingredients.
· Mix thoroughly with spoon in one direction.
· Remove extra water from crushed carrots and add them along with walnuts to the cake mixture. Mix the whole thing again in the previously chosen direction.
· Pour the cake batter in baking utensil and bake at 190 oC for first 20 minutes and then at 170 oC for another 40 minutes.
· Serve at room temperature.
